Recipe of the Month
All-American Strawberry Shortcake - Redbook's Young Mother magazine from 30+ years ago
Rich baking powder biscuits, soaked in berry juices and lavished with whipped cream.
Biscuits
2 cups all-purpose flour
3 tablespoons granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
6 tablespoons very cold butter or margarine, cut into 1/2' pieces
3/4 cup heavy cream
Filling
2 pints fresh strawberries, hulled and sliced
3 tablespoons granulated sugar
1 cup whipping cream
Biscuits: Heat oven to 425 degrees F. In a small bowl, thoroughly mix flour, sugar, baking powder and salt. Add butter and cut in with a pastry blender or two knives until mixture resembles coarse meal. Stir in cream until mixture begins to clump together in a dough. Turn out onto a lightly floured surface and knead lightly 5 times, until dough holds together. Roll out 3/4" thick on a lightly floured surface. Cut out 6 biscuits with a 2 1/2" or 3" biscuit cutter, or lightly floured drinking glass, and put onto a greased baking sheet. Bake 10 to 12 minutes until golden.
Filling: In a small bowl mix strawberries and 2 tablespoons of the sugar. Let stand 1 hour, stirring occasionally and pressing berries gently with a spoon to release some of their juices. In a medium-sized bowl beat whipping cream and the remaining 1 tablespoon sugar with an electric mixer or rotary beater until soft peaks form when beater is lifted.
To serve: Split the warm biscuits. Put bottom halves on 6 dessert plates; spoon berries and juice over them. Top with whipped cream and biscuit tops. Makes 6 servings. Per serving: 597 calories
