OCTOBER IS HERE!

October has arrived, and rather quickly I might add.  I swear I thought yesterday was the first day of school.  My goal of having a daily routine to sew has not happened like I had hoped.  Despite my best efforts, I have made time to sew only a handful of days.  With two boys in High School, it seems like our lives are a little busier than before.  For those of you who don't know, I have a freshman and a senior this year.  Having the "last first day of school" and the "last Homecoming" for my senior has had this mom in a whirlwind of emotions.  When the announcement came in the mail to order caps and gowns, I felt silly bursting into tears.  Having time in front of my sewing machine, though my "therapy", comes second to enjoying the time with my family.  I can only wish time would slow down just a little.

It's starting to act like soup weather...here is one of my family's favorites!

Potato Kielbasa Soup

This potato kielbasa soup recipe is full of cheese, crispy sausage pieces, and potato chunks! It's a hearty and cheesy soup, perfect for lunch or dinner. Yield 12 servings.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound kielbasa, cut into ½ inch pieces
  • 2 garlic cloves, minced
  • ½ cup finely diced yellow onion
  • ½ cup peeled and finely diced (2 large carrots)
  • ½ cup finely sliced celery (2-3 stalks)
  • 4 cups chicken stock
  • 1 1/2 pounds potato, cut into cubes
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • ½ cup shredded parmesan cheese
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped parsley

Instructions

Add olive oil to a Dutch oven or soup pot and heat over medium-high heat. Add the sausage and cook for 5-6 minutes, stirring frequently. Remove the sausage using a slotted spoon.

Add garlic, onions, carrots, and celery and sauté for 2 minutes.

Add the chicken stock and potatoes. Bring to boil and then reduce heat. Cover and cook for 15 minutes, or until the potatoes are tender.

Add the cooked sausage, milk, cheddar cheese, parmesan cheese, salt, and pepper. Stir and cook on low heat 5-10 minutes longer, until the cheese has melted.

Stir in parsley before serving. Enjoy!
