DECEMBER NEWS

Welcome December!  This is it...the last month of 2023.  As you finalize your holiday projects, and work like elves to get projects finished, remember to sit down and take a moment to reflect back on what you've accomplished this year.  Maybe you were a rock star and finished everything on your WIP list...or maybe you didn't get much done, but you simply enjoyed time in front of your machine.  Either way, great job!  Sometimes we don't give ourselves enough credit (I'm totally guilty of this.)  So I encourage you to take a moment, reflect, rejoice and relax.

Also, I want to give a BIG THANK YOU to everyone who has supported me in my role as Shop Owner.  Thank you to my customers who come in and shop...without you we would not be here.  Thank you to my staff who help me provide exceptional service to our customers.  Thank you to my family who understand that sometimes late nights are required.  My journey, though it has just begun, has been amazing, exciting and a little overwhelming at times.  But I wouldn't trade this job for anything.  I'm looking forward to what's ahead and I can't wait to experience it with all of you.

December Recipe: Mistakes

My mother-in-law was making cookies one year and ran out of the Hershey Kisses that usually go on top of her Peanut Butter Blossoms.  She had all 4 of her grandchildren with her and decided that it would be easier to skip the trip to the store to get more kisses, and that she could use Reese's Peanut Butter cups instead.  She referred to them as "Mistakes", but if you love peanut butter and chocolate together, you'll agree that the cookies are just fine with the substitution.

  • 3/4 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar, plus more for rolling
  • 1/2 cup packed brown sugar
  • 1/4 tsp salt
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • Reese's Peanut Butter cups (approx 36), unwrapped

Instructions

  • Preheat the oven to 375°F. Line cookie sheets with parchment paper.
  • In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, combine the peanut butter, unsalted butter, sugars and salt. Cream together by beating on medium speed until well combined. Add the egg and vanilla. Beat until well combined. Scrape down the bowl. Add the flour and baking soda and beat on low speed just until combined.
  • Scoop the dough and roll into 1-inch balls. Coat in additional granulated sugar if desired. Place on a prepared baking sheet 2 inches apart.
  • Bake for 8 to 10 minutes or until the cookies look puffy and cracked and the bottom just start to turn brown. Immediately press a chocolate kiss into the center of each cookie. (The cookies will crack and that’s okay!) Allow the cookies to cool completely on the pan, until the chocolate is set. Serve or store in an airtight container for up to 1 week.
